I’ll admit, I really don’t cook much. I’m more of an eater. I usually come home from work and dinner is ready on the table for me to eat. A couple weeks ago K and I offered to cook our Sunday night family dinner to give my dad a break from the kitchen. My parents always say, “You can always cook, you know.” But when we actually do cook, they become completely uneasy when I use my dads All-Clad cookware and pretty much every other dish in the house. So, K and I wanted to do something special to appreciate all of my dad’s hard work and make slider burgers. And not just any kind of slider, three different kinds - beef, beef with bleu cheese, and lamb, mint and feta burgers!
Since there are 3 different kinds of burgers, I’m going to break out this one post into 3 separate recipes. But, all 3 generally follow the same cooking instructions.
Recipes after the jump
Cheeseburger Sliders
Ingredients
2lbs organic ground beef (preferably 80/20)
1/2 tbsp salt
1/2 tbsp freshly ground pepper
2 tsp worcestershire sauce
16 slices of cheddar cheese
26 potato rolls
2 cups red leaf lettuce roughly chopped
1 cup halved grapevine tomatoes
Directions
Thaw meat thoroughly before seasoning. Mix together the beef, salt, pepper and worcestershire sauce with a wooden spoon. Do not use your hands because the meat will become dense. Also, no need to pre-marinade the meat because the patties are very thin and you can season them when they’re on the grill. Divide the meat mixture into 2s and reserve one batch for our next variation of sliders.
Next, take a cutting board and line it with saran wrap. Place the meat on the cutting board and cover with another piece of saran wrap. Take a rolling pin and begin rolling out the meat starting from the center to about a 1/4 inch in thickness. From there, cut out the patties 4×4 inch squares.
I used a cooktop grill on our stove to cook the burgers. Turn up the heat to medium-high and begin cooking your patties. After about 1.5-2 minutes, flip and brown the other side. After the flip, add the sliced cheese so it’ll melt onto the patty. On the other half of the cooktop, place the buns, sliced side down, to toast.
Assemble the patties, toppings and buns. Serve with a side of Bush’s Baked Beans then enjoy!
Beef w/ Bleu Cheeseburger Sliders
Ingredients
add 3/4 cup crumbled bleu cheese to above recipe
Directions
Take the other half of the raw meat mixture and add the bleu cheese and mix gently so you don’t over work the meat. Follow the same directions as above. No need to add sliced cheese to this burger.
Lamb Sliders
Ingredients
1lb organic ground lamb
1/2 tbsp salt
1/2 tbsp freshly ground pepper
2 tsp cumin
1/4 cup fresh mint, sliced
3/4 cup crumbled feta
1/2 cup store bought tzatziki sauce
8 potato rolls
1 cup red leaf lettuce
1/2 cup halved grapevine tomatoes
Directions
Mix ground lamb with salt, pepper and cumin with a wooden spoon. Next, add in the mint and feta. After loosely mixed, roll out the meat to a 1/4 inch in thickness and cut out 4×4 inch squares.
Throw the patties on the grill and cook for 1.5-2 minutes or until browned. Assemble the cooked patties wit the toppings and toasted buns then add a dollop of tzatziki sauce. Serve and enjoy!
