Sam’s Kitchen - Mint Cookies-n-cream Cookies

My brother has become quite the baker. His latest obsession is Anthony’s Cookies n’ Cream cookies, cookies made from crushed Oreos. He and my sister-in-law loved them so much, they tried to recreate the cookie at home. After a day of experimenting, my brother created a cookie almost EXACTLY like Anthony’s, just less greasy.

I tried the recipe on my own, using mint Oreos. I didn’t crush them enough, so my cookies were a little chunkier than my brothers.

Ingredients:

1 cup butter, melted (i use 1 stick salted, 1 stick unsalted)
2 cups brown sugar, packed
2 eggs
2 2/3 cup all purpose flour
1 tsp baking powder
1 tsp baking soda
about 10 oreos, crushed (the fineness depends on you)

Cooking Instructions:

Preheat oven to 375 degrees F.

Line cookie sheets with parchment paper (I use a Silpat. it seems to work the best). Mix the butter and sugar then beat in the eggs 1 at a time.

Once combined, add in dry ingredients including the crushed Oreos. I used a Ziploc bag to crush the Oreos – bad idea because the cream smears all over the bag and doesn’t get into your batter. Try using a food processor.

Bake 6-7 minutes depending on your oven. Keep checking them. Take them out when they are a little bit underdone. Leave them on the baking sheet for a couple minutes, then put onto a rack to cool.
